Chhole Bhature is the most favorite dish of my brother. Although he likes only Mom made chhole bhature, but this time he liked mine too. It is a very popular punjabi dish and is usually served in breakfast. Chhole is basically chickpeas made by adding spices & bhature is a fried indian bread. Here is step by step procedure of how to make delicious chhole bhature without using onion & garlic gravy.
Ingredients
For Chhole :
Chickpeas - 2 cups
Tomato - 3
Green chilli - 3-4
Red chilli powder - 1 1/2 tablespoon
Garam masala - 1 tablespoon
Whole black pepper - 8-10 cloves
Turmeric powder - 1/2 tablespoon
Cumin seeds - 2 teaspoon
Cloves - 8-10
Cinnamon - 1/2 teaspoon
Coriander leaves - 2 tablespoon
Aniseeds - 1 tablespoon
For Bhature :
All purpose flour/Maida - 2 cups
Baking powder - 1 teaspoon full
Citric acid - 1/2 teaspoon
Oil - 1 tablespoon
Salt to taste
Preperation
Soak the chickpeas for 1 night in water. Take a pressure cooker and put soaked chhole in it with 1 teaspoon baking soda & salt to taste. Put on flame and take 3-4 whistles. Turn off the flame.
In the mean while prepare the dough for bhature. Take a big thali and seive 2 cups maida in it, then add 1 tablespoon oil, salt to taste, baking powder & citric acid. Mix all the ingredients well & knead tha dough very well to make the soft.
Keep it aside and cover it with a wet cotton cloth.
How to cook
For Chhole :
Take a mixer grinder, add 3 tomatoes and the remaining spices. Grind it fine.
Put on flame a frying pan with 3 tablespoon oil in it, its gravy tastes best when cooked in little more oil. Upon heating, add the grind spices.
Stir it and let it cook until the gravy leaves oil.
When the gravy leaves oil, put boiled chhole and mix well, let boil for few minutes more. Granish it with coriander leaves and onion rings & serve hot with hot bhature.
Take out medium size balls from bhature's dough and roll out in oval shape. Fry properly from both sides and serve hot.
Garma garam Chhole Bhature is now ready to serve. Mango pickle, lemon & onion makes perfect combination with chhole bhature. Enjoy!!!!
