Malai Sandwich


Ingredients

Milk - 4 cups
Lime juice - 2 tablespoon
Baking powder - 1 pinch
Sugar - 2 cup

For Stuffing

Mawa - 150 gms
Fresh cream - 1/2 cup
Icing sugar - 1/2 cup
Rose extract - 2 drops
Saffron  - 12 pieces
Pista & raisins for decoration.

Preperation

To make chhena, put on flame boil 4 cups of milk in a heavy bottom pan and add 1-2 tablespoon lime juice in milk to curdle. Turn off the flame and strain the curdle in a strainer lined up with muslin cloth.
Rinse the freshly made cottage cheese with cold water, keep it hung for around 30 minutes to get rid of excess water.
Take another frying pan with heavy bottom, put 2 cups sugar and 3-3 1/2 cups water to make sugar syrup.
Now take out freshly made cottage cheese and mix a pinch of baking powder. Knead/mix  cottage cheese & baking powder well  and make flat cylindrical rolls.
Put these rolls in boiling sugar syrup, sprinkle some water drops in intervals until the rolls come up and keep it aside to cool.
Now beat mawa, fresh cream, icing sugar and rose extract well. Then cover the rolls with whipped cream.
Garnish it with pistachios, saffon & raisins.
