Khaman Dhokla

Khaman Dhokla is basically a Gujrati cuisine but liked & loved all over India. Though there are varieties of Dhokla's made, khaman dhokla is the most easy & quickly made dhokla. You just have to add some flavors with gram flour and here it is "Khaman Dhokla" ready to eat. Gram flour absorbs water that's why we feel more thirsty after eating any dish of gram flour. In my family it is the most favorite breakfast. People have it in their tables whenever they want to eat.


Ingredients

Gram flour - 1 cup
Citric acid - 1 1/2 teaspoon
Eno fruit salt - 1 teaspoon
Salt to taste
Oil - 1 tablespoon
Sugar cubes - 1 teaspoon

How to cook

Take a bowl and add gram flour in it with 1 1/2 teaspoon citric acid, salt to taste, 1 teaspoon sugar cubes & 1 tablespoon oil. Add water to make a thick batter and whisk it well till the citric acid & sugar cubes dissolves.
Put on flame a large pot to steam the dhokla. Fill the pot with sufficient water so that the metal ring is half dipped in it. Before placing the dhokla batter in the pot water should start boiling.
Then put 1 teaspoon eno fruit salt & little water in the batter, again whisk it well and put the batter directly into the container. Then place it in the pot and cover it with lid.
After few minutes, open the lid and let it cool.
Cut it into square pieces.

 Temper:

Put on flame a frying pan with 1 tablespoon oil. Heat it and put 1 tablespoon mustard seeds, when it began to crackle put chopped green chilli, curry leaves & few sugar cubes. Boil it and spread all over the square pieces.


Serve with either coconut chutney or green chilli chutney. You can also grate some coconut over it.
