Chhole Bhature (Without onion & garlic)

Chhole Bhature is the most favorite dish of my brother. Although he likes only Mom made chhole bhature, but this time he liked mine too. It is a very popular punjabi dish and is usually served in breakfast. Chhole is basically chickpeas made by adding spices & bhature is a fried indian bread. Here is step by step procedure of how to make delicious chhole bhature without using onion & garlic gravy.

Ingredients

For Chhole :

Chickpeas - 2 cups
Tomato - 3
Green chilli - 3-4
Red chilli powder - 1 1/2 tablespoon
Garam masala - 1 tablespoon
Whole black pepper - 8-10 cloves
Black cardamom - 1

Khaman Dhokla

Khaman Dhokla is basically a Gujrati cuisine but liked & loved all over India. Though there are varieties of Dhokla's made, khaman dhokla is the most easy & quickly made dhokla. You just have to add some flavors with gram flour and here it is "Khaman Dhokla" ready to eat. Gram flour absorbs water that's why we feel more thirsty after eating any dish of gram flour. In my family it is the most favorite breakfast. People have it in their tables whenever they want to eat.


Ingredients

Gram flour - 1 cup
Citric acid - 1 1/2 teaspoon
Eno fruit salt - 1 teaspoon
Salt to taste
Oil - 1 tablespoon
Sugar cubes - 1 teaspoon

Chatpati Bhel Puri

Chatpati Bhel is all time favorite snack of mine. It is a combination of puffed rice, tomato, onion, chutney's, potato, sev etc.
Bhel puri is a very quickly made snack when you want to have some light food.


Ingredients

Puffed rice - 2 cups
Potato - 1 large (boiled)
Tomato - 1 (chopped)
Onion - 1 (chopped)
Green chutney - 2 tablespoon

Aloo Poha

Poha is basically flattened or beaten rice. In the Madhya Pradesh region, Poha is the most favorite breakfast. Specially Indori Poha is very famous because of huge varities of namkeen over there. Poha when combined with jalebi creates magic. It is the most simple, quick & tasty snack. You just have to add some light spices and pohe is ready. Lets check how this delicious receipe is cooked.

Poha - 4 cups
Potato - 1 large (chopped in cubes) 
Onion - 2 medium (julian cutting)
Green chilli - 2 (chopped)
Salt to taste

Aloo Paranthe

Aloo ke paranthe are all time favorite of mine. They are the most popular breakfast through out western, central & northern region. They are simply potato stuffed cooked with butter or ghee.
Makes 5 servings.


Ingredients

Boiled potatoes - 10-12
Wheat flour - 5 cups
Salt to taste
Garam masala - 1 teaspoon
Aniseeds (saunf) - 1 teaspoon
Roasted cumin seeds (sika jeera) - 1 1/2 teaspoon

Vegetable Gold Coin


Ingredients

  • Bread slice - 6
  • Potato -2 (boiled)
  • Carrot - 1/2 cup (grated)
  • Green peas - 1/2 cup (boiled)
  • Onion - 1 (finely chopped)

Bread Crunch




Ingredients


  • Bread slice - 8 (corners removed)
  • Whole Mung beans (moong dal) - 1 cup
  • Coriander leaves - 1/2 cup(finely chopped)
  • Asfoetida(hing) - 1 pinch
  • Green chilli - 2
  • Salt to taste
  • Oil - 2 cup

 How to cook

  • Wash mung dal properly and leave it to soak in water for 2 hours.
  • After 2 hours, mix green chilli and grind the mixture fine and make paste of it.
  • Part the bread slices into 4 pieces and marinade the slices with the paste.
  • Now deep fry the marinaded slices until they turn golden in color.
Take out in a dish and serve hot with tomato ketchup or coriander mint chutney.

Moti Mahal ki Dal

  • Kidney beans (rajma) - 1/2 cup (soaked in water for 3-3 1/2 hours)

  • Pistachios -  1 tablespoon (sliced)
