Baked Palak in White Sauce

Hello friends, normally you have eaten simply fried Palak or Palak with potato or tomato but this time get ready to taste something new.

INGREDIENTS

  • Butter - 4 tablespoon
  • Ginger-garlic paste - 1 teaspoon
  • Onion - 2 (boiled & grind)
  • Turmeric powder - 1/4th teaspoon
  • Spices mixture - 1 1/2 teaspoon
  • Red chilli powder - 1 teaspoon
  • Tomato - 3 (boiled & grind)
  • Spinach - 250 grams (boiled & grind)
  • Salt - 1 teaspoon
  • Milk - 1 cup

For White Sauce

  • Butter - 2 tablespoon
  • Maida - 3 tablespoon
  • Cheese cube - 1
  • Milk - 1 1/2 cup.

Kaju Curry

INGREDIENTS

  • Cashew nuts (kaju) - 1 tablespoon
  • Poppy seeds (khus khus) - 1 tablespoon
  • Sesame seeds (til) - 2 teaspoon
  • Watermelon seeds(magaz ) - 1 tablespoon
  • Peanuts (mungfali) - 2 teaspoon
Mix all the ingredients and make paste of it.

Dal Maharani

INGREDIENTS: 

  • Whole masoor dal - 1 cup
  • Kidney beans(Rajma)  - 1/2 cup (soaked in water for 3 hours)
  • Milk - 1 cup
  • Curd - 1/2 cup
  • Ginger-garlic paste - 1/2 teaspoon
  • Butter or Ghee
  • Green cardamom - 2
  • Black cardamom - 1
  • Onions - 2 chopped
  • Red chilli - 7
  • Red chilli powder - 1 teaspoon
  • Spices mixture - 1/2 teaspoon
  • Tomato - 2 finely chopped
  • Salt - 1/2 teaspoon
  • Coriander leaves - 2 tablespoon

Malai kofta

INGREDIENTS:

STEP - I

  • Potatoes - 4(Boiled & Grated)
  • Bread slices - 3 (crushed)
  • Spices mixture - 1/4th teaspoon
  • Red chilli powder - 1/4th teaspoon
  • Salt to taste
Put all the above ingredients in a bowl and mix well. Keep it aside.

STUFFING :

For stuffing we need - 
  • Mawa - 50 grams
  • Cottage cheese - 50 grams (grated)
  • Orange color -  1/4th teaspoon
  • Salt - 1 pinch
Mix well all the ingredients and make small balls of it.

STEP - II

For making kofta, make medium size balls of the ingredients taken in step - I. Then take two potato balls and sandwich a stuffed ball in between two potato balls. Keep in mind the stuffed ball should not get flatten and give oval shape to the kofta, deep fry it one by one.

SPICES TO GRIND :

  • Onions - 3 (boiled & grind)
  • Tomato - 4 (boiled & grind)
  • Ginger-garlic paste - 1 teaspoon
  • cashew nuts - 15-20 (soaked in water)
  • Coriander seeds - 1 teaspoon
  • Aniseeds - 1 teaspoon
  • Turmeric - 1 teaspoon
  • Spices mixture - 1 teaspoon
  • Green chilli - 2
  • Black pepper - 10-12
  • Green cardamom - 4
Put all the spices in the mixture and grind fine.

Now take a fry pan and put 5 tablespoon oil, upon warming put the grind spices and heat it for 5-6 minutes. After 5-6 minutes mix 2 tablespoon mawa, 1 teaspoon sugar, 2 1/2 cup milk, 1 teaspoon salt. Leave it to cook.

HOW TO SERVE :

Take a dish & place one kofta in that. Put the gravy above it and decorate with some fresh cream. Garnish the dish with coriander leaves.

Kasoori Paneer

Lets discuss step by step process about how to cook Kasoori Paneer - 

STEP - I
  • Take 200 grams cottage cheese cut into small cubes.
  • In a fry pan put 5 tablespoons of oil and deep fry the small cubes.
  • Take out the pieces from the fry pan and put it in a bowl pre-filled with water so that the cheese cubes remain soft.
STEP - II

Spices to grind :

  • Kasoori methi - 1 tablespoon
  • Fennel seeds - 1 teaspoon
  • Ginger-garlic paste - 2 teaspoon
  • Green chilli - 2
  • Curd - 2 tablespoon
  • Green cardamom - 4
  • Cinnamon - 1
  • Turmeric - 1 teaspoon
  • Red chilli - 1 1/2 teaspoon
  • Spices mixture - 2 teaspoon
  • Boiled onions - 2
  • Boiled tomatoes - 5
  • Coriander seeds - 1 teaspoon
Put all the spices in mixer grinder and grind properly.

STEP -III

Take a fry pan and put 5 tablespoon butter and upon heating put all the grind spices, cook it for 5 minutes. Additionally, mix 2 tablespoon mawa or fresh cream. Then put 2 cups of milk and salt to taste. Atlast, add the small cubes of cottage cheese. Mix properly all the ingredients and serve.
Garnish it with coriander leaves and serve.

Navratna Curry

INGREDIENTS :

  • Cabbage - 1 cup
  • Cauliflower - 1 cup
  • Capsicum - 1 cup
  • Green peas - 1 cup
  • Carrot - 1/2 cup
  • Milk - one & half cup
  • Salt - 1/4 th teaspoon
  • 1 cup pineapple (chopped)
  • 2 tablespoon fresh cream or mawa

Step - I

Take a bowl and put all the vegetables written above with one and a half cup milk & a pinch of salt. Boil the vegetables for few minutes until it is half boiled.

SPICES TO GRIND :

  • 3 boiled onions
  • 4 boiled tomatoes
  • 3 green chillies
  • Ginger - Garlic paste - 2 teaspoon
  • Kasoori methi - 1 teaspoon
  • Turmeric  - 1 teaspoon
  • Kashmiri mirch - 2 teaspoon
  • Everest garam masala - 2 teaspoon
  • Green cardamom - 4
  • Aniseed - 1 teaspoon

STEP - II

Grind all the spices in a mixer and keep aside.

STEP - III

Take a fry pan and add 5 tablespoon oil or butter. Put all the grind spices in the frying pan when the oil is warm. Cook the spices for 6-7 minutes in medium burner.
Put 1 cup pineapply(chopped) or Apple or grapes.
After that mix half boiled vegetables in the frying pan, then salt to taste. Add 2 tablespoon of fresh cream or mawa and 100 grams cottage cheese fine pieces. 
Atlast steam it for 6 minutes.


Navratna curry is ready to serve. 

TIPS :

People who do not like onions can use cabbage or raw papaya or calabash instead.
Cottage cheese used in this recipe is first fried in oil then put the pieces in cold water so that it doesn't get tight.

Fruit Ball

INGREDIENTS :

  • Bread slices - 6(cut out the brown part)
  • Finely chopped fruits - 2 cups
  • White cream - 2 tablespoon
  • Pineapple crush - 2 tablespoon
  • Milk - 2 cups

METHOD :

Dip one bread slice in milk & squeeze out the milk from the bread, put a little quantity of finely chopped fruits on the bread & make balls of it. Place the ball in the serving bowl and mix 2-3 drops of vanilla essence in the white cream, mix well essence and cream. Then in the serving bowl add any two crushes one by one to get more taste to your dish. 
Fruit balls looks more captivating when decorated with the use of puff filled with cream.

Swiss Sunflower

INGREDIENTS :

  • Milk - 4 cups
  • Sugar - 5 tablespoon
  • Milk powder - 5 tablespoon
  • Custard - 2 tablespoon
  • Cottage cheese - 100 grams(grated)
  • Strawberry crush - 2 tablespoon
  • Sponge rasgulla - 1/2 - 1/2 pieces
  • Yellow colored cream
  • Chocolate sauce

METHOD :

For Cottage cheese custard :

Take a utensil & add into it 4 cups of cold milk , 5 tbsp sugar mix them well until the sugar melts properly. Then mix 5 tablespoon milk powder , 2 tbsp custard. Heat the mixture to make it thick.
When it gets thick mix grated cottage cheese & 1 tbsp strawberry crush. Put it in refrigerator for 5- 10 minutes. 
Take a dish & put cottage cheese custard. Now, put a dot of chocolate sauce on the 1/2 piece sponge rasgulla. 
Decorate the pieces with yellow cream with the use of nozzle.

Mango Yogurt Cheesecake

INGREDIENTS :

  • Home made cake pieces - 2 cups
  • Mango crush - 2 tablespoon
  • Cottage cheese - 100 gram(grated)
  • China grass - 5 teaspoon
  • Cheese - 1 tablespoon(grated)
  • White cream - 1 1/2 cup
  • Yellow color - 1/4th teaspoon
  • Milk powder - 2 tablespoon
  • Vanilla essence
  • Pietin

For First Layer :

Take a bowl ,  put 2 cups cake pieces & 2 tbsp mango crush. Mix it well and place it in pietin . Allow it to cool for 10 mins in refrigerator.

For Second Layer :

In a mixer , put 100 gm grated cottage cheese, mango crush , china grass, 1 tbsp grated cheese, white cream , yellow color & 2 tbsp milk powder, grind all the ingredients well. Then  place the second layer above the first layer. Allow it to refrigerate for 20-25 minutes.

For Third Layer :

Mix vanilla essence in white cream, fill the pietin with the vanilla flavored white cream representint it as the top layer. Take 2-3 colored creams & make cones of it to decorate the yummy Mango Yogurt Cheese Cake.
