INGREDIENTS
- Brinjal slices - 2 (oval shaped)
- Cornflour - 2 tablespoon
- Peanuts - 2 tablespoon
- Oil - 4 tablespoon
- Coriander seeds - 1 tablespoon
- Green cardamom powder - 1/2 teaspoon
- Ginger-garlic paste - 1 teaspoon
- Onion - 2 (boiled & grind)
- Curry leaves - 8 - 10
- Green chilli - 2 (finely chopped)
- Aniseeds - 1 teaspoon
- Turmeric powder - 1/4th teaspoon
- Spices mixture - 1/2 teaspoon
- Tomato - 3 (boiled & grind)
- Salt - 1 teaspoon
- Capsicum - 2 (finely chopped)
- Water - 1/2 cup
Step - I
Wash gently brinjal slices & then dust it properly from both the sides with cornflour. Deep fry the slices and keep it aside.
Step - II
Then fry 2 tablespoon peanuts seperately in the pan and keep aside.
Step - III
Take a fry pan and in that put 4 tablespoon oil, upon heating put 1 tbsp coriander seeds, cardamom powder, ginger-garlic paste, onion pury, curry leaves, finely chopped green chilli, aniseeds , mix well and cook it until it leaves oil in the pan.
After that, put turmeric powder, spices mixture, red chilli powder, tomato pury and salt to taste.
Now mix finely chopped capsicum, 1/2 cup water and slightly crush the fried peanuts and mix well.
Turn off the flame.
How to Serve
Take a serving dish and spread a layer of the gravy then place brinjal slices horizontally, then again spread another layer of gravy. Cover the dish gently and grate 1 cheese cube evenly on the dish.
Bake the dish for 20 minutes at 180 degree centigrade.
Baked brinjal is now ready to be served.
