Crispy Corn Fritters






Corns are my all time favorite & corns are making their place in the market.  Corn fritters or pakora are made using besan or gram flour. These are made with either sweet corn or regular corn.

Crispy corn pakora or fritters are best served with a cup of hot tea & mango chutney.

Ingredients

Corn - 2 cups (grated)
Wheat flour - 1 cup
Saunf or aniseed - 1 tablespoon
Salt to taste
Green chilli - 2 (chopped)
Red chilli powder - 1 teaspoon
Coriander leaves - 2 tablespoon (chopped)

How to cook

Take a dish and put grated corns in it. Add 1 cup wheat flour, chopped green chilli, chopped coriander leaves, red chilli powder, 1 tablespoon saunf.



With the help of water make slightly thick paste out of it, add water so as to maintain the consistency.



Put on high flame a frying pan with sufficient oil in it. Upon heating, deep fry the fritters until they turn golden in color.


Dish out and serve hot.

Baingan ka Bharta





Baingan or Brinjal is liked by most of the people,specially  baingan bharta. Baingan ka bharta makes great combination with malwa's famous "dal bati".

Here is step by step pictorial representation of baingan ka bharta.

Ingredients

Brinjal - 2 large
Garlic cloves - 5-6 (chopped)
Onion - 2 large (chopped)
Salt to taste
Cumin seeds - 1 teaspoon
Coriander powder - 1 teaspoon
Turmeric powder - 1/2 teaspoon
Red chilli powder - 1 teaspoon
Green chilli - 2-3 (chopped)
Coriander leaves for garnishing

How to cook

First of all take a dish and mix few drops of oil & salt. Keep aside.


Then make horizontal & vertical cuts in the brinjal. Coat this oil & salt mixture onto the brinjal (it makes peeling of the brinjal easy).



If you use microwave oven then put these brinjals for 5 minutes otherwise place them on gas stove.


Peel off the brinjal skin & throw it away. Gently mash the brinjals with hands. Keep aside.



Now put on flame a fry pan with 1 1/2 tablespoon oil in it, upon heating put 1 teaspoon cumin seeds, let them crackle, then add chopped garlic in it. Saute it then add chopped onion & green chilli (i have used red chilli) till it turn golden in color.



When it turn golden in color, put coriander powder, turmeric powder & red chilli powder, salt to taste.



Mix well, saute it for few more minutes. Baingan bharta is ready.
Garnish it with coriander leaves & serve hot.

Onion curd Sandwich






 Onion curd sandwich makes a perfect snack when combined with tea or coffee. Its very light & tastes yummy. Just spend few minutes & onion curd sandwich is ready.

Ingredients

Hung curd - 1 cup
Onion chopped -  2 (chopped)
Green chilli - 2-3 (chopped)
Black pepper powder - 1 teaspoon
salt to taste
Bread slices - 10-12
Butter

How to make

First of all take one cup hung curd & chopped onion.









 Mix curd with chopped onion, also add black pepper powder , green chilli & salt to taste.





Now take two bread slices and remove the edges. Melt some butter and apply over the slice.




Apply onion curd mixture greased bread slice.



Grease the another bread slice & place it on top of it.

Put on flame a non stick tawa, upon heating cook it from both sides with butter.




Do the same process with rest of the slices.

Onion curd sandwich is ready . Serve hot with tomato ketchup.

Bread Rolls





Its tea time and here's for you a perfect , yummy & a quick to made snack "Bread Rolls'. These are my first choice whenever I have leftover boiled potatoes. 

Here is step by step pictorial representation for perfect bread rolls.

Ingredients

Bread slices - 10-12
Potato - 2-3 (boiled & mashed)
Salt to taste
Garlic - 10-12 cloves (chopped)
Red chilli powder - 1 teaspoon
Garam masala - 1/2 teaspoon
Amchur powder - 1 teaspoon
Onion - 1 (roughly chopped)
Green chilli - 2 (chopped)
Turmeric powder - 1/4th teaspoon
Coriander powder - 1/2 teaspoon
Oil to fry

How to make

Take a frying pan and put 1 tablespoon oil in it, upon warming add chopped onion & green chilli, saute it till it turns golden, then mix turmeric powder, red chilli powder & coriander powder. 
Mix properly & add chopped tomato. 
Cook it for few minutes then add boiled & mashed potatoes. Mix well and make small balls out of it. 
Keep aside.



Now take a bread slice and remove the edges.



Take water in a bowl to dip bread slice in it.  Just dip a bread slice in water to absorb water, make sure it does not get absorbed too much, otherwise the slice will breakdown. It is done to make the bread slice moist enough so that it becomes pretty flexible to roll & shape the slice easier.

Press the dipped slice between your palms to drop excess water. Place one potato ball in the centre.



Cover the potato ball properly from all sides. Repeat the same procedure with remaining bread slices.



Put on flame sufficient oil in a frying pan, upon heating deep fry these rolls till they turn brown.



Strain out in a strainer & fry all the rolls like this only.





Bread rolls are ready, serve hot with whatever you like tomato ketchup or green chutney.

Fruit Custard

Fruit Custard is that dessert that I have grown up eating. It tastes so yum that no one can resist to eat. Although it takes some time to prepare but the result is awesome. Here is the pictorial representation on how to prepare fruit custard.



Ingredients

Custard powder - 1 cup
Milk - 1/2 litre
Apple - 2 (finely chopped)
Banana - 2 (sliced)
Pomegranate - 3 
Sugar - as per the sweetness

How to make

First of all put on flame 1/2 litre milk to boil on low flame. Add sugar granules as per your taste.



Take a small bowl and add 2 tablespoon milk in it, mix custard in the milk so that there will be no lumps.


Slowly add this mixture  in the boiled milk.



Switch to high flame and continously stir the custard. Do not leave it because it gets stick to the bottom of the pan.

Put off the flame and let  it cool at room temperature. Then put it in the refrigerator for 3-4 hours.

Before serving mix chopped fruits and serve chilled. Best coolant to beat the heat.

Fruits can be adjusted as per the season and your taste.

Raw Banana Cutlet

Unlike potato cutlets, raw banana cutlets are very much similar in taste & look too. It is as simple to cook as any other cutlet. The most important thing in these cutlets is that it can be eaten as a 'falahari' that means people who do not eat grains at night mostly Jains as raw bananas are mixed with singhada flour (water chestnut).


Ingredients

Singhada flour - 2 cups
Raw banana - 10-12 (boiled & mashed)
Salt to taste 
Amchur powder - 1 tablespoon
Red chilli powder - 1 teaspoon
Green chilli  - 1 (chopped)
Garam masala - 1/2 teaspoon
Ground nuts - 1 cup (slightly crushed)
Coriander leaves - 2 tablespoon
Ginger - 1 teaspoon
Saunf- 2 tablespoon

How to Cook

Take  a big thali or any mixing bowl, and put boiled banana's, mash them properly. Add 2 cups singhade ka atta .



Mix 2 tablespoon saunf, salt to taste, amchur powder, garam masala, chopped green chilli & mix properly.



You can add chopped green chilli, ginger & coriander leaves here, I have grind them & mixed.




Now grease your palm with oil & make flattened balls out of it.





Deep fry the flattened cutlets till they turn brown in color.




Raw banana cutlets are ready. Serve hot with tomao ketchup or imli  chutney.
